It is good to take a break from baking with almond flour- think about how many almonds it takes to make 1-2 cups of almond meal, which most paleo bread/muffin recipes require when using almond flour. Coconut flour is a great substitute, and is a good source of dietary fiber.
Ingredients:
4 tbsp Coconut flour
4 tbsp Coconut butter/ghee
Pinch of salt
1 tbsp vanilla extract
4 tbsp unsweetened coconut flakes
1 tbsp raw local honey/grade B maple syrup
Dark chocolate chips
Directions:
Mix all ingredients except for chocolate chips.
Fold in chocolate chips.
Bake 350°F for 9-10 minutes. Makes around 7-8 cookies.
